In this talk I will discuss which Effective Field Theories (EFTs) may arise from underlying microscopic theories that have a unitarity, analytic, and crossing-symmetric S-matrix. I will show various applications in particle phenomenology as well as in cosmology, including recent theoretical constraints on Galileons and Lorentz-invariant massive gravity theories.
