After having contextualized how dimer models arise in the study of generalizations of the AdS/CFT correspondence, I will explain how triple crossing diagrams can be used to build dimer models satisfying symmetry constraints and/or displaying substructures, as well as to prove the non-existence of specific dimer models. [The talk will also be streamed online, please ask the organizers for the link.]
